It often has a firmer consistency with more crunch. This recipe is for the lighter, chewier version.

Montélimar nougat is rich in favour and soft. Although of course it’s still sweet, it doesn’t hit you with a 3 day sugar rush or leave you desperate for water. In fact, I was told, it is the best nougat in the world and even Lady Diana, Princess of Wales partook.

Nougat is a confection of nuts (and sometimes fruits) in a sugar paste, and it has been made in the town of Montélimar in the east of France since the 19th century. Shops in this region and nearby Provence specialize in only this style of nougat, which is traditionally made with almonds and flavoured with honey.

Montélimar nougat is one of the 13 'desserts' traditionally served on the Christmas table in Provence. Along with dried fruits, pompe a l'huile (a sweet olive oil bread) and a cake flavoured with orange blossom and fresh fruit, it is one of the four 'essential' desserts.
